Collard greens sautéed in EVOO with shallots, garlic, tomato, sun dried tomato pesto, roasted butternut squash and topped with sesame seeds.
Mozzarella cheese, shitake mushrooms, caramelized onions, roasted red pepper, sweet potato, goat cheese and scallions.

Stuffed peppers with red kidney beans, tempeh, sweet potato, baked with mozzarella cheese, over a chipotle tomatillo salsa then topped with micro greens and maple balsamic reduction.
